Naan Bread 3 Ways

300g plain flour, 0.5tsp baking powder, 0.5tsp salt, 3tsp olive oil, 150ml whole milk, 1head garlic, 1pinch sugar, 30g butter, 30g almonds, 30g raisins, 30g pistachios, 1tbsp brown sugar, 1piece onion, 1piece green chili, 1pinch amchur powder
Instructions
1. In a bowl, mix plain flour, baking powder, salt, olive oil, and gradually add whole milk to bring the dough together. Knead on the work surface, cover with a damp tea towel, and let it rest for up to an hour.
2. Peel garlic cloves, place on a baking tray with a pinch of salt, a pinch of sugar, and a drizzle of olive oil. Roast in the oven at 200 degrees C / 400 degrees F for 15-20 minutes until caramelized.
3. Divide the rested dough into 6 portions. For the caramelized garlic naan, squash roasted garlic into the dough portions, roll out, and cook under the grill at medium heat for 2-4 minutes, turning halfway through. Top with a bit of butter.
4. For Peshwari naan, blend a handful of almonds, raisins, pistachios, and light brown sugar into a filling. Roll out dough, stuff with the filling, fold in, roll out again, and cook on a hot grill pan for 3-5 minutes, turning halfway through. Top with butter.
5. For spicy fried onion naan, bake plain naan under the grill for a couple of minutes on each side. Thinly slice an onion and green chili, cook on low heat in a pan for 10 minutes until caramelized, season with salt and amchur powder, then top the naan with the onion mix and a drizzle of yogurt.
