2cups bread flour, 2cups cake flour, 1.5teaspoons baking soda, 1.5teaspoons baking powder, 1teaspoons coarse salt, 2sticks unsalted butter, 1.25cups granulated sugar, 1.25cups brown sugar, 2large eggs, 2teaspoons vanilla extract, 1.25pounds chocolate disks or chocolate bar, 1pinch flaky sea salt
Instructions
1. Sift together bread flour, cake flour, baking soda, baking powder, and salt into a bowl.
2. In a stand mixer, cream together the butter, granulated sugar, and brown sugar for about five minutes until light and creamy.
3. Add eggs one by one to the mixer on medium-low speed, waiting until each egg is fully incorporated before adding the next.
4. Add vanilla extract and mix well.
5. Add the dry ingredients to the wet mixture and mix on low speed until just combined.
6. Fold in the chocolate disks or chopped chocolate carefully without breaking them.
7. Chill the dough in the refrigerator for 24 to 72 hours to allow the flour to properly hydrate.
8. Scoop the dough into mounds, place on a baking sheet, and top with flaky sea salt.
9. Bake in the oven until edges are golden brown and centers are soft.
