Better Than Takeout Sesame Chicken

1lb Chicken Leg, 1tsp Garlic, 4tbsp Soy Sauce, 0.5tsp Salt, to taste Black Pepper, 0.375tsp Baking Soda, 1to taste Egg White, 0.5tbsp Starch, 1cup Potato Starch, 2cup Frying Oil, 3tbsp Brown Sugar, 2tbsp Liquid Honey, 2.5tbsp Ketchup, 6tbsp Water, 1tbsp White Vinegar, 1tbsp Sesame Oil, 1.5tbsp Toasted Sesame
Instructions
1. Cut boneless and skin-on chicken leg into 1-inch pieces.
2. Marinate the chicken with grated garlic, soy sauce, salt, black pepper, baking soda, egg white, and starch. Mix well and let it sit for 40 minutes.
3. Prepare the potato starch coating. Spray water into the starch while fluffing and mixing to create small lumpy bits for extra crunch.
4. Coat the marinated chicken pieces evenly with the starch, shaking off excess starch.
5. Heat frying oil to 300 degrees Fahrenheit and fry the chicken in batches until the surface is slightly yellow and crispy, then take them out.
6. Let the chicken rest for 15 minutes, then double fry at 380 degrees Fahrenheit for 2 to 3 minutes until golden and extra crispy.
7. Make the sauce by combining brown sugar, honey, soy sauce, ketchup, water, and white vinegar.
8. Pour the sauce into a wok, bring to a boil, thicken with potato starch water, then toss in the fried chicken, sesame oil, and toasted sesame seeds.
