Ingredients
213g all-purpose flour, 200g granulated sugar, 0.25tsp baking soda, 1.5tsp baking powder, 0.25tsp kosher salt, 170g unsalted butter, 120ml whole milk, 120ml sour cream, 3pieces egg whites, 15ml vanilla extract, 450g unsalted butter for frosting, 900g confectioners sugar, 15ml heavy cream
Instructions
1. Preheat your oven to 350 degrees.
2. In a large bowl, combine the dry ingredients: all-purpose flour, granulated sugar, baking soda, baking powder, and kosher salt. Whisk to combine.
3. In another bowl, whisk together melted unsalted butter, warm whole milk, warm sour cream, room-temperature egg whites, and vanilla extract until smooth.
4. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until the flour just disappears.
5. Fill muffin tin cupcake papers about two-thirds full with batter.
6. Bake at 350 degrees for about 18 minutes, or until the centers are springy to the touch.
7. Make the vanilla frosting by creaming room-temperature butter in a stand mixer, then gradually adding sifted confectioners sugar, heavy cream, a pinch of kosher salt, and vanilla extract.
8. Transfer buttercream to a piping bag fitted with a large closed star tip and pipe onto cooled cupcakes.
