Chinese Noodles At Home

Ingredients
200g bread flour, 0.5tsp salt, 2to taste egg, 95ml water, 1tbsp soy sauce, 1tsp chinese black vinegar, 1tsp dark soy sauce, 1tsp ginger, 1tsp garlic, g spring onion, g cilantro, 1tsp chili flake, 2.5tbsp vegetable oil
Instructions
1. Add bread flour and salt into a bowl and mix well.
2. Weigh eggs and water to total 5.5 ounces, whisk together, and slowly pour into the flour.
3. Mix with chopsticks and knead for about 5 minutes until it forms a dough ball.
4. Cover the dough and let it sit for 30 minutes.
5. Knead the dough again using the folding technique for 5 to 8 minutes until smooth and firm.
6. Cut the dough in half, sprinkle flour, roll into a 1 to 2 mm thick sheet, and cut into noodles.
7. Boil the noodles in boiling water for 2 to 3 minutes.
8. Transfer noodles to a bowl and add soy sauce, black vinegar, dark soy sauce, ginger, garlic, spring onion, cilantro, and chili flakes. Pour hot oil over top and mix everything together.
