Deep-Fried Turkey with Pizza Stuffing and Chocolate Mole Sauce

1piece Turkey breast, 1slice Pizza, 1gallon Oil for frying, 5pieces Dried chilis (ancho, pasilla, guajillo), 6pieces Tomatillos, 1piece Tomato, 1piece Onion, 4cloves Garlic, 2discs Mexican chocolate, 1lot Spices (sesame seeds, coriander, cumin, oregano, cloves)
Instructions
1. Cut a pocket into the turkey breast and stuff it with a slice of pizza. Sew or secure the opening shut.
2. Carefully lower the stuffed turkey breast into 325°F oil and fry until the pizza inside reaches 160°F.
3. Toast dried chilis in a pan, add water, cover, and let steep for 10 minutes.
4. Toast spices, corn tortillas, nuts, seeds, and raisins in a dry pan.
5. Broil tomatillos, tomato, onion, and garlic until charred, then add to a blender with the rehydrated chilis, toasted spices, nuts, and crackers. Blend until smooth.
6. Pour the blended mole sauce into a pot, add stock and Mexican chocolate, simmer for 45 minutes until rich and thick, and season with kosher salt.
7. Coat the deep-fried turkey with the chocolate mole sauce, slice, and serve.
