Classic American Fried Chicken

1kg chicken pieces, 1tsp salt, 1tsp black pepper, 1tsp garlic powder, 1tsp onion powder, 1tsp lemon zest, 2cups all-purpose flour, 1tbsp baking powder, 1cup buttermilk, 2pieces egg whites, 2tbsp vodka, 4cups canola oil
Instructions
1. Mix together salt, black pepper, garlic powder, onion powder, and lemon zest to create the dry brine seasoning.
2. Pat dry the chicken pieces with paper towels, then season them evenly with the dry brine mixture.
3. Place seasoned chicken in a Tupperware lined with paper towels, cover, and let sit in the fridge uncovered for at least 4 hours or overnight.
4. In a bowl, whisk together flour, baking powder, onion powder, garlic powder, and salt for the dry coating.
5. In another bowl, whisk together buttermilk, egg whites, and vodka for the wet coating.
6. Double dip the brined chicken first in the flour mixture, then into the buttermilk mixture, and back into the flour mixture, shaking off excess.
7. Heat canola oil in a large Dutch oven to 350°F or 180°C.
8. Fry 2 or 3 pieces of chicken at a time for 7 to 10 minutes until the internal temperature reaches 165°F or 75°C.
9. Remove chicken from the oil and transfer to a wire cooling rack.
