Chocolate Chip and Variation Cookie Dough

8oz unsalted butter, 4.5oz granulated sugar, 9.75oz light brown sugar, 2large eggs, 11.5oz all-purpose flour, 1tbsp kosher salt, 0.5tsp baking soda, 12oz mix-ins and toppings
Instructions
1. Brown the butter in a pan over medium heat, stirring constantly for about 5 minutes until toasted. Transfer to a bowl, cover, and let solidify.
2. In a stand mixer with the paddle attachment, cream the butter, granulated sugar, and light brown sugar together on high speed for about 3 minutes until light and fluffy.
3. Add eggs two large eggs one at a time while the mixer runs on medium speed, ensuring each is fully incorporated.
4. In a separate bowl, whisk together flour, kosher salt, and baking soda. Add to the mixer and mix until just incorporated.
5. Add your choice of mix-ins and toppings (about 12 oz total), gently massage them into the dough, cover, and refrigerate for 1 to 3 days.
6. Scoop the dough using an ice cream scoop onto a parchment-lined baking sheet and bake at 375 degrees Fahrenheit for 18 to 20 minutes, rotating halfway through.
