Easy Banana Cake

4ea ripe bananas, 1tbsp lemon juice, 0.5cup milk, 420g all-purpose flour, 1tsp cinnamon, 1.25tsp baking soda, 1tsp salt, 226g unsalted butter for batter, 300g granulated sugar, 220g light brown sugar, 4ea eggs, 1tbsp vanilla extract for batter, 226g cream cheese, 113g unsalted butter for frosting, 2tsp vanilla extract for frosting, 4.5cup powdered sugar
Instructions
1. Preheat your oven to 350 degrees Fahrenheit.
2. Peel the ripe bananas and mash them up into a measuring cup until you have about 2 cups.
3. Transfer the mashed bananas to a large bowl, add lemon juice and room temperature milk, and mix well.
4. In another bowl, whisk together all-purpose flour, cinnamon, baking soda, and salt.
5. In a stand mixer or large bowl with a hand mixer, beat softened unsalted butter, granulated sugar, and light brown sugar on medium high for 3 to 4 minutes until light and fluffy.
6. Reduce speed to medium and add eggs one at a time, waiting for each to incorporate before adding the next.
7. Add vanilla extract and mix until well combined.
8. Alternate adding the flour mixture and banana mixture in three batches, starting and ending with flour, mixing on low just until combined.
9. Transfer the batter to a lined 9x13-inch baking pan and smooth the top with an offset spatula.
10. Bake at 350 degrees Fahrenheit for 55 to 60 minutes until a skewer inserted in the center comes out clean.
11. Make the cream cheese frosting by beating softened cream cheese and softened unsalted butter on medium speed for 2 minutes until creamy.
12. Add vanilla extract and gradually mix in powdered sugar on low to medium-low until smooth and fluffy.
13. Spread the frosting evenly over the cooled banana cake and serve.
