Tres Leches Cake

2cups all-purpose flour, 0.75tsp baking powder, 0.5tsp salt, 5large eggs, 1.25cups sugar, 0.5cups whole milk, 2tsp vanilla, 2cans evaporated milk, 2cans sweetened condensed milk, 2cups heavy cream, 2tbsp powdered sugar
Instructions
1. Preheat your oven to 350 degrees F and butter a 9 by 13-inch baking dish.
2. In a large bowl, combine dry ingredients: all-purpose flour, baking powder, and salt. Whisk to distribute and set aside.
3. Separate egg yolks and whites for 5 eggs. Whip egg whites on high until foamy and doubled in size.
4. Slowly drizzle in 1/4 cup of sugar into the egg whites and continue to whip until stiff, perky peaks form.
5. In another bowl, beat the 5 egg yolks with the remaining cup of sugar until pale and fluffy.
6. Drizzle in half a cup of whole milk and 2 teaspoons of vanilla into the egg yolk mixture while mixing.
7. Pour the flour mixture into the yolk mixture and mix on low until almost combined, then finish mixing gently by hand.
8. Gently fold the meringue into the batter in two additions using a spatula.
9. Transfer the batter into the prepared baking dish, spread into an even layer, and bake at 350 degrees F until set.
10. Prepare the soaking milk mixture by whisking together evaporated milk, sweetened condensed milk, and additional milk.
11. Poke holes all over the warm cake using a skewer or fork, then pour about half of the milk mixture slowly over the cake.
12. Cover and chill the cake in the refrigerator for at least an hour, preferably overnight.
13. Whip cold heavy cream and powdered sugar together until soft peaks form.
14. Spread the whipped cream over the chilled cake, create swoops for texture, slice, and serve with extra milk mixture.
