Crumb Cake

2.5cups all-purpose flour, 0.75cup white sugar, 0.5cup brown sugar, 0.5teaspoon baking powder, 0.5teaspoon baking soda, 0.25cup milk, 1cup butter, 1egg egg, 0.75teaspoon salt, 2teaspoons vanilla, 2teaspoons ground cinnamon, 0.33cup sour cream, touch powdered sugar
Instructions
1. Preheat oven to 325 degrees Fahrenheit and line an 8 by 8 inch pan with parchment paper.
2. Make the crumble topping by whisking together three-quarters of a cup of flour, granulated sugar, brown sugar, salt, and ground cinnamon.
3. Add half a cup of melted or softened butter while mixing with a fork to form a wet sand consistency, then mix in the remaining three-quarters of a cup of flour to create crumbles of varying sizes.
4. In a separate bowl, whisk together one and a half cups of flour, salt, baking soda, and baking powder.
5. In a mixer bowl, cream half a cup of butter and half a cup of sugar on high for about three minutes until light and fluffy.
6. Add sour cream and one egg, mixing and scraping the bowl down until smooth and completely homogeneous.
7. Add more sour cream, a quarter cup of milk, and two teaspoons of vanilla, mixing until incorporated.
8. Run the mixer on low and slowly add the flour mixture until almost combined, then finish folding by hand to avoid overmixing.
9. Spread the thick cake batter evenly into the prepared pan.
10. Scatter the crumb topping evenly all over the top of the batter.
11. Bake in the oven at 325 degrees for 40 minutes.
12. Let the cake cool in the pan for about 10 minutes, then remove and finish with a sprinkle of powdered sugar.
