Apple Pie Filling

3kinds apples, some fresh lemon juice, some sugar, pinch nutmeg, some cinnamon, grains salt, some corn starch, 2crusts pie crust, some unsalted butter
Instructions
1. Peel apples with a paring knife, cut them in quarters, remove the core, and cut them into fifths.
2. Add fresh lemon juice to the apples and toss around.
3. Add sugar, a small pinch of nutmeg, cinnamon, and a tiny pinch of salt. Toss until sugar is dissolved and apples look wet.
4. Add corn starch and mix until dissolved with no visible corn starch.
5. Roll out the bottom pre-made pie crust and place it in a 9-inch pie dish.
6. Pack the apples tightly into the pie dish and pour over the accumulated juices.
7. Dot the apples with unsalted butter.
8. Unroll the top pie crust, place it on top, tuck it inside the bottom crust, and roll the bottom crust over to seal. Press down with fingertips.
9. Cut air vents on top with an X and slashes.
10. Place on a foil-lined pan, brush with an egg wash, and dust with white sugar.
11. Bake in a 375 degree oven for an hour until the crust is nice and brown and apples are tender.
