Instructions
1. Preheat oven to 400 degrees Fahrenheit with the rack towards the middle to upper third.
2. Line a nine-inch springform pan with two pieces of parchment paper in a cross pattern, pressing it down to the edges and folding down excess bits.
3. Ensure cream cheese is very soft at room temperature, using the microwave for 10-second spurts on half power if needed, then place it into a stand mixer fitted with the paddle attachment and cream it up.
4. Add granulated sugar, salt, and vanilla to the cream cheese, and mix on medium-low speed until creamy, scraping down the bowl a couple of times.
5. Add room temperature eggs one at a time while mixing on medium-low speed, scraping down the bowl halfway through.
6. Sift in all-purpose flour while the mixture runs on low speed.
7. Drizzle in heavy cream while mixing on low speed until the batter is silky smooth and well incorporated.
8. Pour the batter into the lined springform pan, gently tap the pan on a kitchen towel to remove excess air bubbles, and place on a lined baking sheet.
9. Bake in the preheated oven at 400 degrees Fahrenheit for about 45 minutes until golden and domed. Allow to cool to room temperature, then refrigerate for at least five hours.
