Pork Shogayaki (Japanese Grilled Ginger Pork)

200g Pork Loin Slices, to taste Pepper, to taste Wheat Flour, 1tbsp Soy Sauce, 1tbsp Sake, 1tbsp Mirin, 0.5tsp Sugar, 0.5tbsp Grated Ginger, 0.5tsp Grated Garlic, 100g Cabbage, 4to taste Okras, to taste Sesame Oil
Instructions
1. Remove the stem ends of the pre-washed okras, peel off firm skins, and rub with salt to remove fuzz.
2. Immerse the okras in boiling water for about 10 seconds, remove, place on a mesh strainer, and fan to cool down.
3. Remove the stalk from the cabbage leaf, shred finely, and serve on the plate beforehand.
4. Cut the boiled okras diagonally and serve them next to the shredded cabbage.
5. Mix soy sauce, sake, mirin, sugar, grated ginger, and grated garlic in a bowl to make the seasoning sauce.
6. Trim excess fat from pork loin slices, make cuts in tough stringy parts, and sprinkle pepper on one side.
7. Lightly dust both sides of the pork slices with flour using a pastry brush or mesh strainer.
8. Heat sesame oil in a pan over medium heat and place the pork slices without overlapping.
9. Fry the pork in a short time. When almost cooked, flip them over.
10. Immediately after the other side is browned, pour the ginger seasoning sauce directly onto the heated surface, swirl the pan, and simmer until the sauce thickens.
11. Flip the pork over again, serve on the plate along with the cabbage and okras, and pour the remaining ginger sauce on top.
