Moist Banana Bread

215g all-purpose flour, 1teaspoon baking powder, 1teaspoon baking soda, 1teaspoon cinnamon, 0.5teaspoon all spice, 1pinch cardamom, 0.25teaspoon nutmeg, 0.25cup unsalted butter, 0.25cup coconut oil, 0.75cup granulated sugar, 2count large eggs, 2tablespoon yogurt, 1teaspoon vanilla, 4count bananas, 2tablespoon brown sugar
Instructions
1. Ripen regular bananas by popping them into the oven on a baking sheet at 350 F for about 10 minutes until they turn black.
2. Sift together dry ingredients including all-purpose flour, baking powder, baking soda, cinnamon, all spice, cardamom, and freshly grated nutmeg. Whisk and set aside.
3. Cream together the unsalted butter and coconut oil until smooth and fluffy.
4. Add granulated sugar to the creamed fats and beat until well combined and fluffy.
5. Add large eggs one at a time, letting each incorporate fully before adding the next.
6. Stir in yogurt and vanilla extract.
7. Cut open the baked ripe bananas, scoop out the gooey flesh, and mash them with a potato masher.
8. Line a 9x4 inch baking tin with parchment paper to create a sling, and lightly grease the inside.
9. Mix the cooled banana mush into the wet batter mixture.
10. Add the dry mixture into the wet ingredients and mix on low speed just until combined.
11. Transfer the batter into the prepared baking tin and smooth out the top with a spatula.
12. Prepare a bruleed banana topping by cutting a fresh banana in half, pressing the cut side into brown sugar, and placing it face up on the top of the batter.
13. Bake in an oven set at 350 F for about 55 minutes, or until a skewer inserted in the center comes out clean.
