Jamie’s Ultimate Apple Pie

4ea apples, handful sugar, splash water, 1handful blackberries, sprig mint, pinch cinnamon, 0.25ea nutmeg, 1knob butter, 1jar stem ginger in syrup, 1handful elderflower cordial, 1handful golden sugar, 1sheet puff pastry, 1ea egg
Instructions
1. Peel the apples and put the skins into a pan with sugar, water, two blackberries, and a couple of sprigs of mint to make a wonderful syrup.
2. Slice and core the apples (using a mix of eaters and bramley apples for texture and flavor).
3. In a warm pan, add butter, cinnamon, and nutmeg, then shake it up.
4. Add ginger syrup, chopped stem ginger, elderflower cordial, and golden sugar into the pan.
5. Add the apples to the pan and cook for about 5 minutes, tossing them well.
6. Roll out the pre-bought puff pastry to about 10 inches.
7. Transfer cooked apples into a pie dish, top with a handful of blackberries, and drizzle with a little extra elderflower cordial.
8. Whisk an egg to make an egg wash and brush around the edge of the pie dish.
9. Place the pastry over the pie, trim excess pastry, make a chimney hole in the top, pinch the edges to seal, and brush with egg wash and sugar.
10. Bake in the oven at 180°C / 350°F for 40 to 45 minutes until bubbling, golden, and delicious.
11. Dust with icing sugar using a star stencil, and serve with ice cream and the reserved syrup.
