Kevin's Famous Chili

Ingredients
3ounces dried ancho chiles, 1ounce dried cascabel chiles, 1tablespoon cocoa powder, 3tablespoons cornflour, 1tablespoon ground cumin, 1tablespoon dried oregano, 3cups chicken stock, 6whole roma tomatoes, 2whole jalapenos, 0.5whole habanero pepper, 4cloves garlic, 3pounds chuck steak, 2tablespoons olive oil, 1bottle light lager beer, 2tablespoons brown sugar, 1can red kidney beans
Instructions
1. Rip open the dried ancho and cascabel chiles and remove all the seeds.
2. Tear the chiles into about 1-inch pieces and toast in a sauté pan over medium heat until barely smoking and fragrant.
3. Place toasted chiles in a food processor and blitz into a fine powder.
4. Add cocoa powder, cornflour, ground cumin, and dried oregano to the food processor and pulse to combine.
5. Add chicken stock to make a spice paste.
6. Core and dice the roma tomatoes.
7. Finely mince jalapenos and half of a habanero pepper, wearing gloves.
8. Mince garlic cloves into garlic paste.
9. Trim gristle and fat from chuck steak, cut into strips, and roughly chop to get chunky ground beef texture.
10. Brown the beef in batches in a wide pot with olive oil to build up crust and fond.
11. Sweat onions in the pot, deglaze with light lager beer, and scrape the bottom of the pot.
12. Add chopped tomatoes, remaining beer, spice paste, and browned beef to the pot.
13. Add remaining chicken stock, brown sugar, garlic paste, and soaked red kidney beans.
14. Cover and bake in a 300 degree oven for 2 to 3 hours until the beef is completely tender.
15. Season with salt and pepper, stir, and serve topped with aged white cheddar.
