Red Velvet Cake

300g All-purpose Flour, 6g Kosher Salt, 6g Baking Soda, 113g Butter, 150g Granulated Sugar, 2ea Eggs, 15ml Vanilla Extract, 240ml Buttermilk, 15ml Vinegar, to taste Red Gel Food Coloring, 15g Cocoa Powder, 226g Unsalted Butter, 452g Cream Cheese, 680g Confectioners Sugar
Instructions
1. Prep three 6-inch pans or two 8-inch pans with baking spray or butter and dust with flour or cocoa powder.
2. Whisk together 300g all-purpose flour, 6g kosher salt, and 6g baking soda in a large bowl and set aside.
3. In a stand mixer fitted with a paddle attachment, cream 113g room temperature butter until smooth.
4. Add 150g granulated sugar to the butter and mix until well combined and fluffy.
5. Add 2 room temperature eggs one at a time, mixing well between each addition, and scrape down the bowl.
6. Drizzle in 2 teaspoons of vanilla extract and mix.
7. Mix 1 cup buttermilk and 1 tablespoon vinegar together in a measuring cup.
8. Add red gel food coloring to the buttermilk mixture to reach the desired red shade.
9. Sift in 3 tablespoons of natural cocoa powder into the batter and mix.
10. Alternately add half of the dry mixture and half of the wet buttermilk mixture, mixing until combined.
11. Divide the batter evenly among the prepared cake pans.
12. Bake at 350°F (175°C) for approximately 35 minutes until the edges pull away from the pan and the center springs back when touched.
13. Let cakes cool slightly, then tap the sides to release and invert onto a cooling rack to cool completely.
14. Make the cream cheese frosting: Beat 1 cup unsalted butter and 16 oz cream cheese until creamy and smooth.
15. Add 1 teaspoon vanilla extract and a pinch of salt, then slowly mix in 6 cups sifted confectioners sugar in batches.
16. Scrape the bowl and continue mixing on low until a silky, smooth consistency is achieved.
17. Assemble the cake by placing the first cake layer on a stand, spreading frosting between layers, covering the outside, and decorating with piped swirls and red cake crumbs around the base.
