The Perfect Steak

Ingredients
1.5inch thick sirloin steak, 1splash olive oil, 1pinch pepper, 1sprig rosemary, 1sprig time, 1pinch sea salt, 1handful watercress
Instructions
1. Rub the steak with a little olive oil and season quite generously with pepper.
2. Preheat a griddle pan for four or five minutes until screaming hot.
3. Put the steak in the pan, push it down, and put the hot lid on top to cook.
4. Turn the meat after a couple of minutes to get nice crisscross bar markings, and cook to your liking.
5. Halfway through cooking, remove the lid, add rosemary and thyme, and use the rendered fat to brush and baste the steak.
6. Take the steak out and let it rest so the juices go back and create a natural sauce.
7. Slice the steak thinly, season with a pinch of sea salt from a height, and plate up with resting juices and watercress.
