Jollibee Dumplings with Chili Oil

1basket Chickenjoy, 2stalks shallot, 1stalk celery, 1piece ginger, 8cloves garlic, 2cups water, 1pinch salt, 2tablespoons Sichuan peppercorn, 0.75cup Sichuan chili flakes, 1.5teaspoons five-spice powder, 120g flour, 3teaspoons xanthan gum, 2teaspoons olive oil, 0.5pound ground pork, 1cup Napa cabbage, 0.5cup king trumpet mushroom, 0.25cup chives, 2tablespoons gravy, 1tablespoon soy sauce, 0.5tablespoon sesame oil, 1tablespoon sake, 2cups oil, 1pinch toasted sesame seeds
Instructions
1. Separate the chicken skin from the fried chicken and take the meat off the bones.
2. Put chicken bones, one shallot, one stalk of celery, ginger slices, three cloves of garlic, two cups of water, and a pinch of salt into a pressure cooker. Cook for 60 minutes, then strain the stock.
3. In oil, cook minced shallot, minced garlic, and Sichuan peppercorn on low and slow for about 15 minutes until the temperature reaches 215 degrees.
4. Chop the reserved chicken skin to the same size as the shallots and add into the oil. Cook for another 15 minutes until crispy and golden.
5. Combine Sichuan pepper, chili flakes, five-spice powder, and salt in a bowl, then pour the hot oil mixture over it. Mix well and let sit for at least 30 minutes.
6. Blend the Jollibee white rice with water until it forms a paste texture.
7. In a bowl, combine flour, 60g of the rice paste, xanthan gum, water, and olive oil. Knead by hand until smooth and bouncy, then cover and rest for 30 minutes.
8. Mince the fried chicken meat and mix with ground pork, chopped Napa cabbage, king trumpet mushroom, chives, gravy, soy sauce, sesame oil, grated garlic, grated ginger, and sake.
9. Roll the dough into a long log, cut into pieces, and roll out into 4 to 5-inch circles with thinner edges than the center.
10. Assemble the dumplings with the filling.
11. Heat oil in a pan over medium-high heat and sear the dumplings until the bottom has a nice brown color.
12. Add Jollibee broth to the pan, cover, and cook for about 5 minutes or until the inside is completely cooked and stock is evaporated.
13. Plate the dumplings, pour chili oil over them, and garnish with toasted sesame seeds.
