Perfect Pavlova

4large large eggs, 1pinch salt, 0.5teaspoon cream of tartar, 1cup super fine sugar, 2teaspoon vanilla extract, 1.5teaspoon cornstarch, 2cups heavy cream, 0.25cup powdered sugar, 3cups fresh fruit (strawberries, blackberries, blueberries)
Instructions
1. Set your oven to 300 degrees Fahrenheit so it is nice and hot.
2. Separate four room temperature large eggs, adding only the egg whites into a very clean mixer bowl. Ensure there are no bits of yolk.
3. Add a pinch of salt and 1/2 teaspoon of cream of tartar to the egg whites. Mix on medium low for 1 to 2 minutes until frothy.
4. While mixing on medium low, slowly add 1 cup of super fine sugar one spoonful at a time.
5. Scrape down the bowl and add 1 teaspoon of vanilla extract. Mix on medium high for 5 to 8 minutes until stiff, glossy peaks form.
6. Sift in 1.5 teaspoons of cornstarch and gently fold it into the meringue using a spatula.
7. Trace a circle on an upside-down sheet of parchment paper. Add small dots of meringue at each corner of the paper as glue, then shape the meringue into a circle with a hollow center.
8. Put the Pavlova in the 300 degree oven and immediately reduce the temperature to 250 degrees Fahrenheit. Bake for 1 to 1.25 hours, then turn off the oven and let it cool inside for 3 hours.
9. Make the whipped cream by whipping heavy cream, 1/4 cup powdered sugar, and 1 teaspoon of vanilla extract until soft peaks form.
10. Top the cooled pavlova with a mountain of whipped cream and your choice of fresh berries.
