Homemade Pizza

500g strong flour, 1teaspoon salt, 7g dry yeast, 325ml warm water, 30g semolina, 200g tomato passata, 20ml olive oil, 40g parmesan cheese, 50g mozzarella cheese, 10g fresh basil
Instructions
1. In a bowl, mix 500g of strong flour with 1 teaspoon of salt. Dissolve 7g of dry yeast in 325ml of warm water, then pour it into the flour and mix together.
2. Turn the dough out onto a clean surface and knead it thoroughly, pulling and folding until smooth and elastic.
3. Divide the dough into 4 equal portions of about 150g each and roll them into smooth balls.
4. Dust a tray with semolina, place the dough balls on it, cover with a damp cloth, and let them rest and prove in a warm place for 2 hours.
5. Press and stretch the dough out into a circle, pushing any trapped air to the edges to form a crust.
6. Spoon tomato passata starting from the middle, drizzle with olive oil, add a pinch of salt, grate parmesan cheese, tear mozzarella and fresh basil leaves on top.
7. Transfer the pizza onto a paddle dusted with semolina and slide it into a hot oven to bake for 7 minutes at 220 degrees Celsius.
