Steak and Guinness Pie

3ea onion, 1tbsp olive oil, 1pinch salt, 1pinch pepper, 1sprig rosemary, 3cloves garlic, 1knob butter, 2sticks celery, 2ea carrots, 1portion mushrooms, 500g brisket of beef, 1can Guinness, 1tbsp flour, 100ml beef stock, 1sheet puff pastry, 200g cheddar cheese, 1ea egg
Instructions
1. Peel and slice three onions with a little olive oil, salt, pepper, a sprig of rosemary, three cloves of garlic, and a knob of butter.
2. Add two sticks of celery, two carrots, mushrooms, and inch-diced brisket of beef. Season with a big pinch of pepper and salt.
3. Pour in one can of Guinness, stir in a heaped tablespoon of flour, and top up with a little water or beef stock.
4. Put the lid on and simmer in the oven to make a robust stew.
5. Stir 100g of cheddar cheese into the cooked stew and transfer the filling into a dish, then top with another 100g of cheese.
6. Roll out pre-bought puff pastry to about three millimeters thick, cut a lid, and place over the pie. Brush with egg wash, score lightly, and crimp the edges.
7. Bake in the oven at 180 degrees Celsius (350 Fahrenheit) until bubbling and golden.
