Classic Almond Biscotti

250g all purpose flour, 1teaspoon baking powder, 0.5teaspoon kosher salt, 0.25teaspoon baking soda, 3to taste large eggs, 0.5teaspoon vanilla extract, 1teaspoon almond extract, 175g sugar, 120g whole almonds, 1to taste baking chocolate
Instructions
1. Whisk together all purpose flour, baking powder, kosher salt, and baking soda in a bowl.
2. In a separate bowl, whisk together large eggs, vanilla extract, almond extract, and sugar until relatively smooth.
3. Cut whole almonds in half, add them to the flour along with the wet mixture, and mix with a rubber spatula until no dry pockets remain.
4. Dump the dough onto a parchment-lined baking sheet and shape into a uniform log using lightly-wetted fingers.
5. Bake in a 350 degree Fahrenheit oven for 25 to 30 minutes until puffy and set, then let cool for 10 minutes.
6. Lower the oven temperature to 300 degrees Fahrenheit, slice the log evenly, and lay the pieces on their sides back on the baking sheet.
7. Bake at 300 degrees Fahrenheit for 10 to 15 minutes, flip them over, and bake for another 10 to 15 minutes until dry on both sides. Let cool completely.
8. Melt baking chocolate, dip the bottom of each biscotti into the chocolate, and place chocolate-side down on parchment paper to solidify.
