Homemade Bacon

2pounds pork belly, 0.5cup distilled water, 4tablespoons brown sugar, 1tablespoon kosher salt, 2.1grams pink curing salt
Instructions
1. Weigh and measure your pork belly and cut into manageable pieces if desired.
2. Combine distilled water, brown sugar, kosher salt, and pink curing salt in a bowl and mix until dissolved.
3. Pour the curing liquid into a zip-top bag with the pork belly, squeeze out all excess air, and seal tightly.
4. Place the pork in the refrigerator to cure for three days, massaging and flipping every 12 hours.
5. Rinse the cured pork and pat dry, then place on a wire rack in the fridge for 12 hours.
6. Insert a temperature probe into the pork and smoke at 200 degrees Fahrenheit until internal temperature reaches 150 degrees Fahrenheit.
7. Cool to room temperature, refrigerate overnight, and slice into thick slabs of homemade bacon.
