Mushroom Cannelloni

1bunch greens, pinch salt, 2pieces leeks, 2pieces onions, drizzle olive oil, pinch pepper, 3cloves garlic, 500g mushrooms, 1pack cannelloni pasta, 3tablespoons plain flour, 750ml milk, 200g cheddar cheese
Instructions
1. Steam and wilt the greens in a pan for 30 to 40 seconds, then place them at the bottom of a baking tray and season with a kiss of salt.
2. Cook chopped leeks, onions, pepper, and finely sliced garlic in olive oil in a pan.
3. Add sliced mushrooms to the pan with salt and pepper, and fry and stir for about 15 minutes.
4. Chop the cooked mushroom and vegetable mixture on a board to give it a homemade texture, then let it cool.
5. Make a simple white sauce by heating olive oil and plain flour in a pan, then slowly whisking in milk.
6. Stuff the cannelloni pasta tubes with the mushroom filling and arrange them over the greens in the baking tray.
7. Take the white sauce off the heat, grate a large handful of cheddar cheese into it, and mix well.
8. Pour the cheesy white sauce over the stuffed cannelloni, top with a few mushroom slices and a drizzle of oil.
9. Bake in the oven at 180 degrees Celsius for 40 to 45 minutes until golden and bubbling.
