Shrimp Paya Bibimbap

1batch shrimp shells and aromatics, 2cups dry white wine, 1whole large onion, 4cloves garlic cloves, 2teaspoons gochugaru, 1tablespoon sweet paprika, 14ounces whole plum tomatoes, 0.33cup gochujang, 4cups short grain arborio rice, 2teaspoons toasted sesame oil, 1pound prawns
Instructions
1. Simmer shrimp shells and aromatics for 45 minutes to create shrimp stock, then strain and keep warm with white wine.
2. Saute thinly sliced onion in a large Dutch oven until caramelizing, add garlic, gochugaru, and sweet paprika for 30 seconds.
3. Deglaze with whole plum tomatoes and gochujang, cook for five minutes, then mix in arborio rice.
4. Add warm shrimp stock and wine mixture, season with salt, pepper, and sesame oil, then bake at 375 degrees Fahrenheit for 15 minutes.
5. Top with prawns, cover, and bake for another 15 to 20 minutes.
6. Transfer to a preheated, generously oiled cast iron skillet to create a crispy bottom crust.
