2cup MAIDA (plain flour), 1tsp SUGAR, 1tsp BAKING POWDER, 0.25tsp BAKING SODA, 0.5tsp SALT, 0.25cup CURD / YOGURT, 1tsp OIL, 0.5cup WATER, 4pieces POTATO, 1piece CHILI, 1tsp GINGER, 0.5tsp CHILI POWDER, 0.5tsp GARAM MASALA, 1tsp AAMCHUR (dry mango powder), 0.5tsp AJWAIN (carrom seeds), 1tbsp CORIANDER, 0.5tsp BLACK SESAME, 1tbsp BUTTER
Instructions
1. Mix plain flour, sugar, baking powder, baking soda, salt, curd, and oil. Add water and knead for 10 minutes to make a soft dough, rest for 2 hours.
2. Mash boiled potatoes smooth, add chopped chili, grated ginger, chili powder, garam masala, aamchur, ajwain, coriander, and salt. Mix well to prepare aloo stuffing.
3. Take ball-sized dough, roll to 5 inches, place aloo stuffing ball inside, start pleating and secure tight.
4. Press black sesame and coriander on top, roll into an oval shape, and brush gently with water.
5. Place water-side down on hot tawa, press gently, cook for 1 minute, turn to flame, and cook all sides.
6. Brush with butter and remove gently.
