Ingredients
2litre milk, 2tbsp lemon juice, 1tbsp ghee, 7tbsp sugar, 5tbsp milk, 0.25tsp cardamom
Instructions
1. Boil 2 litre milk and add lemon juice to curdle it.
2. Strain the curdled milk, squeeze well, rinse with water, and hang for 20 minutes to make paneer.
3. Break paneer into pieces and cook on low flame to get a crumble texture.
4. Add ghee and saute on low flame until color changes.
5. Add sugar and 1 tbsp milk, saute until sugar dissolves and starts to brown.
6. Continue adding milk gradually and saute until golden brown after 20 minutes.
7. Cool completely and transfer to a blender to make a fine powder.
8. Transfer powdered mixture back to the pan, add milk, and cook on low to medium flame until dark golden brown.
9. Add cardamom, mix well, and cool slightly.
10. Make cylindrical shape pieces and roll in sugar before serving.
