New Year's Roast Pork

1kg pork loin, 3ea leeks, 1bulb garlic, 1bunch marjoram, pinch sea salt, 2tbsp olive oil, 2tbsp red wine vinegar, 1bunch spinach, 1head savoy cabbage, 1bunch cavolo nero, 1jar butter beans
Instructions
1. Chop the leeks and place them into a pan with a whole garlic bulb.
2. Make the marinade by bashing marjoram leaves and sea salt in a mortar and pestle, then stir in olive oil and red wine vinegar.
3. Score the pork rind in a crosshatch pattern every half centimeter without cutting into the meat.
4. Rub half the marinade into the scored pork loin and place the skin separately on a tray to oil and salt.
5. Roast the pork and the skin in the oven at 200 degrees Celsius for 1 hour and 20 minutes.
6. Boil assorted greens in salted boiling water, cool quickly, squeeze out excess water in a tea towel, and finely chop.
7. Mash the cooked garlic from the pan and add butter beans, chickpeas, and cannellini beans with a bit of cream fresh to the leeks.
8. Slice the rested roast pork and serve over the bean stew, greens, crackling, and herb marinade drizzle.
