Easy Cheesecake

180g graham cracker crumbs, 2tbsp granulated sugar, 65g unsalted butter, 3blocks cream cheese, 200g granulated sugar, 0.25tsp salt, 2tsp vanilla, 3large eggs, 120g sour cream
Instructions
1. Preheat oven to 350 degrees Fahrenheit.
2. Mix graham cracker crumbs, 2 tablespoons of sugar, and melted unsalted butter together until it resembles wet sand.
3. Transfer the crumb mixture into a 9-inch springform pan, press into an even layer on the bottom and about an inch up the sides, then bake at 350 degrees Fahrenheit for 15 minutes.
4. In a stand mixer fitted with a paddle attachment, beat room temperature cream cheese on medium-low for about a minute until smooth.
5. Add 1 cup of granulated sugar gradually while the mixer is running on low, then add salt and vanilla.
6. Add the eggs one at a time, mixing on medium-low after each addition and scraping down the bowl.
7. Add the sour cream and mix on medium-low until silky smooth.
8. Pour the batter into the cooled crust. Bake at 350 for 15 minutes, then reduce to 300 and bake for another 30 to 35 minutes until the center wobbles slightly.
9. Turn off the oven and leave the cheesecake inside with the door closed for an hour to cool slowly.
10. Cool on the countertop for another hour, then chill in the fridge for at least 6 hours before slicing.
