Beer-Braised Lamb Shanks

2to taste lamb shanks, to taste salt, to taste black pepper, to taste olive oil, 1to taste celery, 1to taste carrots, 1to taste onions, 1cloves garlic, 2teaspoons tomato paste, 12ounces beer, 2sprigs rosemary, 1pinch cayenne, 1handful spring onions
Instructions
1. Season the lamb shanks generously with salt and fresh ground black pepper on both sides.
2. Brown the lamb shanks in a pot with a little olive oil over medium-high heat for about 5 minutes until browned and caramelized, then remove them.
3. Reduce heat to medium, add chopped celery, carrots, onions, minced garlic, and a pinch of salt to the same pot and sauté for a few minutes.
4. Add tomato paste and stir in, cooking for another minute or so.
5. Pour in a 12-ounce bottle of beer and add a couple of sprigs of rosemary, then bring to a simmer on high heat.
6. Return the lamb shanks to the pot, reduce heat to low, cover, and simmer until fork tender (about 2 to 3 hours, turning halfway through).
7. Remove the tender lamb shanks from the pot and keep warm.
8. Boil the sauce on high until reduced by about half, then season with salt and cayenne.
9. Serve the lamb shank over mashed potatoes, top with the reduced sauce, and garnish with sliced spring onions.
