Orange Cake

300g all-purpose flour, 0.75teaspoons baking powder, 0.25teaspoon salt, 200g sugar, 3whole oranges, 0.75cups orange juice, 1tablespoon vanilla extract, 240ml veggie oil, 3whole eggs, 120g powdered sugar, 2tablespoons additional orange juice for glaze
Instructions
1. Set the oven to 350 degrees Fahrenheit. Grab an 8 by 4 inch loaf pan and butter it up or use baking spray.
2. In a large bowl, add two and a half cups or 300 grams of all-purpose flour, three quarters of a teaspoon of baking powder, and one quarter teaspoon of salt. Whisk or sift together.
3. In another bowl, add one cup (200 grams) of sugar. Add about two tablespoons of orange zest. Use your clean hands to mush the orange zest and sugar together to release the citrus oils.
4. Juice the oranges to get three quarters of a cup of freshly squeezed orange juice.
5. To the sugar and zest mixture, add three quarters of a cup of freshly squeezed orange juice, one tablespoon of vanilla extract, one cup (240 mils) of veggie oil, and three room-temperature eggs. Whisk until smooth.
6. Pour the wet ingredients into the dry ingredients. Gently mix and fold together until you see almost no streaks of flour left.
7. Pour the batter into the 8 by 4 inch loaf pan. Bake at 350 degrees Fahrenheit for about an hour and 10 minutes, or until a toothpick in the center comes out clean.
8. Let the cake cool in the pan for about 15 minutes, then transfer to a cooling rack or serving plate to cool completely.
9. Make the orange glaze by whisking together one cup (120 grams) of powdered sugar, a few tablespoons of orange juice, and the zest of half an orange until you reach a drizzling consistency.
10. Liberally drizzle the orange glaze all over the top of the cooled cake.
