Sesame Chicken

Ingredients
1lb chicken breast, 1tbsp garlic, to taste black pepper, 4.5tbsp soy sauce, 0.5tsp salt, 0.33tsp baking soda, 1crack egg, 3.66tbsp sweet potato starch, 2tbsp honey, 3tbsp brown sugar, 2.5tbsp ketchup, 1tbsp Chinese black vinegar, 3.5tbsp water, 1drizzle sesame oil, 1.5tbsp roasted sesame seeds, 1garnish scallion
Instructions
1. Cut chicken breast in half then slice it into 1/3 of an inch thick piece.
2. Marinate the chicken with finely minced garlic, black pepper, soy sauce, salt, baking soda, one egg, and sweet potato starch. Mix thoroughly and set aside for 20 minutes.
3. Coat the chicken with starch using the spray bottle technique to create clumpy bits, then shake off excess starch.
4. Let the coated chicken rest for 15 minutes so the starch has time to bond.
5. Heat oil to 380 F and fry the chicken in two batches until cooked through. Drain excess oil.
6. Let the fried chicken sit for 15 minutes to allow moisture to redistribute and soften the crust before double frying.
7. Prepare the sauce by mixing honey, brown sugar, soy sauce, ketchup, Chinese black vinegar, and a starch-water slurry.
8. Bring oil to 400 F and double fry the chicken for 2-3 minutes until golden and the crust is reinforced.
9. Pour out most of the oil, add the sauce, stir until thickened, toss in the chicken with a big drizzle of sesame oil and roasted sesame seeds, and mix thoroughly.
