Homemade Bagels

Ingredients
750g strong flour, 450ml water, 7g dried yeast, 3teaspoons sugar, 3teaspoons salt, tiny bit oil, packet bicarbonate of soda, 1egg egg, handful sesame seeds, handful poppy seeds, handful sunflower seeds
Instructions
1. Make a well in the middle of 750 grams of strong flour, add 450 mls of tepid water, 7 grams of dried yeast, 3 teaspoons of sugar, and 3 level teaspoons of salt. Mix thoroughly.
2. Knead the dough for about 10 minutes until smooth and elastic, bringing in extra flour as needed.
3. Place the dough in an oil-rubbed bowl, cover with a warm damp tea towel, and let prove for about an hour and a half.
4. Knock back the dough to remove air, divide it roughly into two halves, then each half into three, and finally split each to make 12 balls.
5. Use your thumb dipped in flour to poke a hole in each ball, stretching it into a ring to form the bagel shapes.
6. Poach the bagels in simmering water with bicarbonate of soda and a little salt for about a minute on each side, then drain.
7. Egg wash the bagels and generously sprinkle with sesame seeds, poppy seeds, or crushed sunflower seeds.
8. Bake in a preheated fan oven at 200 degrees Celsius for around 25 minutes until golden and delicious.
