Goodfellas Prison Sauce

3cloves garlic, 3pieces small onions, 1lb sweet Italian sausage, 1lb hot Italian sausage, 1piece beef shank, 1lb veal neck bones, 1glug red wine, 3cans San Marzano tomatoes
Instructions
1. Slice the garlic paper-thin so that it liquefies in the pan with a little oil.
2. Chop the small onions and set them aside.
3. Space out the sweet and hot Italian sausages in the pan and get some good color going on them, then set aside.
4. Brown the beef shank and pieces of veal neck, then set them aside once good fond is developed.
5. Add the onions and a tablespoon of tomato paste, let them get to know each other, then add the thinly slivered garlic and saute until fragrant.
6. Deglaze the pan with a splash of red wine, scraping up all the good fond.
7. Add 3 cans of San Marzano tomatoes and crush them up with a wooden spoon.
8. Scrape the bottom of the pan, add a cup of water, the mountain of meat, fresh basil stems, and a peeled carrot cut into three pieces.
9. Simmer the sauce for 4 hours, scraping occasionally.
10. Fish out the carrots and bones, taste for seasoning, and add salt and pepper if needed.
11. Serve some sauce over cooked pasta with a meatball, sausage, Parmesan cheese, and garnish.
