2cups all-purpose flour, 0.25cup cocoa powder, 0.25teaspoon salt, 0.5teaspoon baking soda, 0.5teaspoon baking powder, 1cup unsalted butter, 1cup granulated sugar, 2teaspoons vanilla, 1to taste egg, 1tablespoon freshly brewed coffee, 1drizzle red food coloring, 0.75cup semi-sweet chocolate, 12ounces cream cheese, 1cup powdered sugar, 1cup white chocolate
Instructions
1. Sift together all-purpose flour, cocoa powder, salt, baking soda, and baking powder, then set aside.
2. In a stand mixer or large bowl, beat unsalted butter and granulated sugar for about two minutes until light and fluffy.
3. Add vanilla, egg, freshly brewed coffee, and red food coloring, mixing well and scraping down the bowl as needed.
4. Add the dry ingredients and mix on low until almost combined.
5. Fold in chopped semi-sweet chocolate on low speed.
6. Chill the cookie dough in the fridge for at least 30 minutes.
7. Scoop and roll the dough into tablespoon-sized balls and place on a lined baking sheet.
8. Bake at 350 degrees Fahrenheit for 10 to 12 minutes until edges are set.
9. Make the cream cheese filling by beating room temperature cream cheese and powdered sugar together.
10. Pipe cream cheese filling between matched cooled cookies to form sandwiches, and drizzle with melted white chocolate on top.
