Dulce De Leche Cake

675g unsalted butter, 1.66cups all-purpose flour, 1teaspoon baking powder, 0.25teaspoon baking soda, 1pinch salt, 1.33cups granulated sugar, 0.5cup sour cream, 0.5cup whole milk, 3pieces egg whites, 3teaspoons vanilla extract, 1teaspoon vanilla bean paste, 1can dulce de leche, 4cups confectioner sugar
Instructions
1. Place two sticks or about 225 grams of unsalted butter into a small saucepan over medium heat, brown the butter, then transfer to a medium bowl and place in the fridge to chill.
2. Sift together all-purpose flour, baking powder, baking soda, salt, and granulated sugar, then set aside.
3. Whisk together the liquid brown butter, sour cream, whole milk, egg whites, vanilla, and vanilla bean paste in a bowl.
4. Pour the wet ingredients into the dry ingredients and give it a good whisk to form the batter.
5. Coat cake pans with cold butter and wrap baking strips around the edge of the pan.
6. Bake the cake layers in the oven at 345 degrees for about 35 minutes or until the edges pull away and the center springs back.
7. Make the buttercream by beating unsalted butter in a standing mixer until creamy, then adding dulce de leche, salt, and sifted confectioner's sugar.
8. Assemble the cake by piping buttercream and dulce de leche between layers, crumb coating, chilling, adding a second layer of buttercream, and decorating the top.
