1cup chopped pecans or almonds, 1cup sugar, 1teaspoon vanilla, 1cup butter, 0.5teaspoon salt, 1cup chocolate chips, 0.25cup water, 1pinch flaked sea salt
Instructions
1. Line a 9 by 9 inch baking dish with parchment paper.
2. Spread one cup of chopped pecans right on the bottom of the baking dish.
3. In a pot, combine one cup of granulated sugar, one cup of butter cut into pieces, half a teaspoon of salt, and one quarter cup of water.
4. Set over medium heat, stirring frequently with a candy thermometer until it reaches 300 degrees Fahrenheit for the hard crack stage.
5. Off the heat, carefully stir in one teaspoon of vanilla.
6. Pour the caramel evenly over the pecans in the dish and set aside for two minutes to cool slightly.
7. Sprinkle chocolate chips evenly over the surface of the hot toffee, then cover with foil and let sit for four minutes so the chocolate melts.
8. Remove the foil, give the melted chocolate a light swirl, and top with finely chopped pecans and flaked sea salt.
9. Let it cool completely for about four hours or pop it into the fridge to set faster, then break or chop into pieces.
