50-Minute Crispy Oven Fries

2ea Idaho potato, 1tbsp kosher salt, 0.5tsp baking soda, 3tbsp olive oil, 2tbsp parmesan cheese, 1tsp fresh parsley, 0.5tsp garlic powder, 1pinch black pepper, 2tbsp ketchup, 1tsp sriracha
Instructions
1. Cut the Idaho potato into half-inch batons, keeping the skin on.
2. Par-cook the potatoes in a pot of boiling water with kosher salt and baking soda for five to seven minutes.
3. Gently remove the fries from the water and let them cool to release moisture.
4. Drizzle an unlined baking pan with olive oil, arrange fries in an even layer with ample room, and drizzle with more olive oil and salt.
5. Bake in a 425 degree Fahrenheit oven for 25 to 30 minutes until golden brown.
6. Toss the baked fries with freshly grated parmesan, salt, fresh parsley, garlic powder, and freshly ground black pepper.
7. Mix sriracha and ketchup together to make the spicy dipping sauce.
