Baked Potato Puffs

Ingredients
1cup Yukon Gold potatoes, cup water, to taste butter, pinch salt, to taste flour, 1to taste egg, shake cayenne pepper, grating fresh nutmeg, to taste oil for frying
Instructions
1. Simmer Yukon Gold potatoes in salted water until very tender but not falling apart.
2. Drain the potatoes and mash them using a potato masher or a ricer.
3. In a pot, bring water, butter, and a pinch of salt to a boil over medium heat.
4. Stir in flour and cook over medium heat for a few minutes until it forms a dough that pulls cleanly off the bottom of the pot.
5. Transfer the dough to a bowl and let it cool for about 5 minutes.
6. Mix in one beaten egg using a spatula until completely incorporated into a very soft and sticky dough.
7. Combine exactly one cup of mashed potatoes with the dough and mix well.
8. Season the mixture with additional salt, a shake of cayenne, and a grating of fresh nutmeg. Mix well.
9. Scoop the mixture into a well-buttered mini muffin pan.
10. Bake in the center of a preheated 450 degree oven for about 20 minutes until golden brown and puffed.
