Wasabi Buffalo Wings

25pieces whole chicken wings, 1pinch salt, 1cup cornstarch, 2tbsp all-purpose flour, 1tsp baking powder, 1tbsp kosher salt, 1cup instant mashed potatoes / potato flakes, 2cups Frank's RedHot, 1cup butter, 1bottle green hot sauce, 3tbsp wasabi paste
Instructions
1. Break down whole chicken wings into drumettes, wingettes, and wing tips.
2. Pat dry and lightly salt wings, then place on a wire rack set in a rimmed baking sheet uncovered in the fridge.
3. Prepare dredges: mix cornstarch, flour, baking powder, and kosher salt. For potato flake dredge, use instant mashed potatoes instead of cornstarch.
4. Coat the chicken pieces in the dredge, pressing and massaging to make sure every nook and cranny is thoroughly covered.
5. Make the classic buffalo sauce by whisking Frank's RedHot hot sauce and melted butter in a 2:1 ratio.
6. Make wasabi buffalo sauce by combining green hot sauce, wasabi paste, and melted butter, whisking well to adjust taste.
7. Heat peanut oil in a pot between 350 to 375 degrees Fahrenheit.
8. Add the wings and fry for 5 to 8 minutes until golden brown and crisp.
9. Toss the fried chicken wings in the prepared wasabi buffalo sauce and serve.
