One Pot Chicken Meal

2ea sweet potatoes, 2ea Granny Smith apples, some fresh sage, 4ea skin-on, bone-in chicken thighs, some salt and pepper, splash bourbon, splash chicken stock, some chopped pecans, 1ea lemon, some chives
Instructions
1. Peel and cube sweet potatoes, then peel, core, and dice Granny Smith apples. Mince fresh sage.
2. Place four seasoned chicken thighs skin side down in a lightly oiled hot skillet. Season the meat side with salt and pepper and sear until deeply browned and crisp.
3. Drain off most of the excess chicken fat, reserving about a tablespoon, and add the sweet potatoes and apples to saute over medium heat.
4. Deglaze with a little bit of bourbon, add a whisper of chicken stock and the minced fresh sage, and return the chicken to the pot.
5. Transfer to a preheated 375 degree Fahrenheit oven and bake until the thickest part of the chicken reaches 175 degrees Fahrenheit.
