Falafel

8ounces dried garbanzo beans, 32ounces water, 3tablespoons fresh dill, 0.25cup fresh parsley, 3tablespoons fresh mint, 1tablespoon cumin seeds, 1tablespoon coriander seeds, 0.25teaspoon Aleppo pepper, 1small onion, 2cloves garlic, 1small lemon, 1teaspoon baking powder, pinch kosher salt, twist black pepper, cup vegetable oil
Instructions
1. Soak dried garbanzo beans in four times their weight of water.
2. Finely chop fresh dill, parsley, and mint.
3. Toast cumin seeds, coriander seeds, and Aleppo pepper over medium heat until fragrant, then grind them up.
4. In a food processor, pulse soaked chickpeas, small onion, and garlic together until roughly chopped.
5. Add freshly chopped herbs, lemon zest, baking powder, salt, black pepper, and freshly ground spices to the food processor. Process until you have a pebbly chunky paste.
6. Shape the falafel mixture into round balls or patties.
7. Fry the falafel in a pan with vegetable oil or deep fry until crispy and golden brown.
