300g chuck, 150g brisket, 30g beef dripping, 5g salt, 5g pepper, 3g msg, 2ea brioche buns, 2slices cheese, 2tablespoons tomato ketchup, 3tablespoons mayo, 1tablespoon american mustard, 30g dill pickle
Instructions
1. Weigh and mix a 70/30 ratio of chuck and brisket. Keep everything very cold so the fat does not melt prematurely.
2. Grind the cubed steak and mix with beef dripping if desired to ensure the right fat content.
3. Gently form the meat into patties without handling them too much, ensuring they are slightly bigger than the buns as they will shrink.
4. Chill the shaped burgers in the freezer or fridge before cooking.
5. Prepare the burger sauce by mixing mayo, tomato ketchup, american mustard, and diced dill pickle.
6. Toast the brioche buns in a hot pan.
7. Cook the patties in a very hot pan with salt, pepper, and a pinch of msg until a nice crust forms.
8. Top the patties with cheese, let melt, and assemble the burgers with sauce and lettuce.
