French Bread Pizza

1loaf French bread, 50ml Olive oil, 1pinch Seasoning (e.g., garlic bread seasoning), 100g Pizza sauce, 100g Mozzarella cheese, 50ml Water, 1loaf Ciabatta bread, 20g Butter, 1pinch Salt, 10g Fresh herbs (e.g., parsley, basil), 10g Parmesan cheese, 2cloves Garlic cloves, 1orange Orange zest, 1shallot Shallot, 3tomatoes Canned whole plum tomatoes, 1pinch Chili flakes, 50g Pancetta, 1pinch Garlic powder
Instructions
1. Cut French bread into large boats. Drizzle with olive oil and seasoning. Toast in the oven for a few minutes until golden brown.
2. Spread pizza sauce on the toasted bread, top with mozzarella cheese. Dab exposed bread edges with water using a pastry brush.
3. Bake in the oven until the cheese is melted and browned. Cut into pieces.
4. Cut ciabatta bread in half. Melt butter in an oven-safe pan over medium heat. Season the pan with salt.
5. Place ciabatta halves cut-side down in the pan, soaking up butter and seasoning. Smash the bread down with a heavy object to ensure thorough browning.
6. Flip the bread and add a little olive oil to fry the bottoms. Turn off the heat.
7. Spread pizza sauce on the bread. Add fresh herbs (parsley/basil), a little Parmesan, and top with mozzarella. Dab exposed bread edges with water.
8. Place the pan under the broiler for about 4 minutes until the cheese is melted and browned. Cool on a rack.
9. Mince garlic cloves and grate orange zest. Chop parsley and combine with garlic and orange zest to make gremolata.
10. Peel and roughly chop a shallot. Sauté shallots in olive oil in a hot pan until they start to brown.
11. Add a few whole canned plum tomatoes to the pan and mash them slightly. Deglaze with the juice of the orange.
12. Transfer the cooked mixture to a narrow vessel. Add a couple more raw whole plum tomatoes from the can. Blend with an immersion blender until smooth. Add chili flakes.
13. Cut a large loaf of bread in half. Cook pancetta in a cold pan over medium heat until fat renders and it's lightly browned. Remove most of the pancetta, leaving some fat.
14. Add a little olive oil to the pan. Place the bread cut-side down and smash it flat with another pan. Cook until golden brown.
15. Turn off the heat. Dust with garlic powder. Spread the prepared sauce, a little Parmesan, and mozzarella. Top with the remaining pancetta. Dab exposed bread edges with water.
16. Broil for about 5 minutes until the cheese is melted and browned. Sprinkle with gremolata and cool on a rack. Cut and serve.
