Chocolate Covered Strawberries

36count ripe strawberries, 340g dark chocolate, 277g white chocolate or white candy melts, 2tsp coconut oil or vegetable shortening
Instructions
1. Grab 36 large, beautifully ripe strawberries. Wash them thoroughly and pat them dry. Ensure they are completely dry before proceeding.
2. Chop 12 oz (340 grams) of dark chocolate into small, uniform pieces. This helps it melt evenly.
3. Place the chopped dark chocolate in a microwave-safe bowl. Microwave in 30-second bursts at half power, stirring in between, until melted and silky.
4. Place 8 oz (277 grams) of white candy melts into a bowl. Melt using a double boiler method: place the bowl over a pot with about 2 inches of simmering water, ensuring the bowl does not touch the water. Stir occasionally until mostly melted, then remove from heat and stir until smooth.
5. Pour the melted dark chocolate into a small bowl or shot glass for easier dipping. Save some for drizzling later.
6. Pour the melted white candy melts into another small bowl or shot glass. Save some for drizzling later.
7. Dip a few strawberries completely into the white candy melts to create a white base for the tuxedo design.
8. Dip the remaining strawberries, alternating between dark chocolate and white candy melts as desired. You can leave a lot or a little of the strawberry uncovered.
9. Place the dipped strawberries onto a baking sheet lined with parchment paper. Do not place them directly on the counter or baking sheet as they will stick.
10. Transfer the reserved melted dark chocolate and white candy melts into separate piping bags. Snip a small tip off each bag.
11. Drizzle the white candy melts over the dark chocolate-dipped strawberries and the dark chocolate over the white candy melt-dipped strawberries to create decorative patterns.
12. For the tuxedo strawberries, dip the white-based strawberries into the dark chocolate at a diagonal to create the tuxedo jacket. Remove excess chocolate.
13. Using a toothpick dipped in dark chocolate, carefully dot on buttons and draw a bow tie on the tuxedo strawberries.
14. Allow the strawberries to set up for 15 minutes at room temperature, or refrigerate for up to 48 hours.
