Spicy Noodle Stir-fry with Salt and Pepper Tofu

4ea garlic cloves, 1ea scallions, 1ea ginger, 200g green beans, 3.5tbsp soy sauce, 1tbsp brown sugar, 1tbsp Shaoxing wine, 2tbsp chili garlic sauce, 3tbsp vegetable broth, 1ea extra-firm tofu, 0.5tsp salt, 0.5tsp white pepper, 0.5tsp onion powder, 0.25tsp garlic powder, 0.25tsp Chinese five-spice powder, 3tbsp arrowroot powder or corn starch, 3tbsp oil
Instructions
1. Finely chop four garlic cloves.
2. Trim any bruised or wilted tops from the scallions, chop off the roots, and thinly slice the entire scallion. Keep the dark green tops separate for later use.
3. Peel the knob of ginger using a spoon. Slice it into wide planks, then stack them and slice into matchsticks.
4. Trim the ends of the green beans and halve them. Smaller green beans can be kept whole.
5. Combine 3 1/2 tablespoons of soy sauce, brown sugar, Shaoxing wine, 2 tablespoons of chili garlic sauce (or 1-2 teaspoons for less heat), and 3 tablespoons of vegetable broth (or water) in a container. Shake well to mix.
6. If using, freeze and then defrost the extra-firm tofu. Squeeze out excess moisture from the tofu using your hands.
7. Slice the tofu block in half lengthwise. Then slice into rectangles or squares about 1/3 of an inch thick.
8. Gently pat the tofu dry a couple more times to remove any remaining excess water.
9. Prepare the seasoning blend: combine 1/2 teaspoon of salt, 1/2 teaspoon of white pepper, 1/2 teaspoon of onion powder, 1/4 teaspoon of garlic powder, and optionally, 1/4 teaspoon of Chinese five-spice powder. Add 3 tablespoons of arrowroot powder or corn starch.
10. Add the seasoning blend to a fine-mesh sieve and dust it evenly over the tofu pieces.
11. Heat a wok or large nonstick skillet dry until wisps of smoke appear. Add oil and coat the sides of the pan.
12. Turn down the heat to medium. Add the tofu pieces a few at a time, spreading them out without overlapping. Cook in batches if necessary.
