Pineapple Fried Rice

8ea shrimp, 1ea egg, 250g cooked rice, 0.25cup small diced onions, 1tbsp soy sauce, 1tsp fish sauce, 1tsp sugar, 0.125tsp salt, 1tsp curry powder, 0.25tsp white pepper, 0.5cup pineapple, 0.33cup roasted or fried cashews, 1ea green onions, 0.5cup tomatoes (seeds removed), 1ea cucumber slices, 0.5tsp shrimp tamale (shrimp paste), 2tbsp vegetable oil
Instructions
1. Prepare ingredients by grouping dry spices (sugar, salt, curry powder, white pepper) and wet ingredients (fish sauce, soy sauce, shrimp paste). Group green onions and tomatoes, and cashews and pineapples.
2. Heat vegetable oil in a pan. Cook the shrimp separately until done. Some shrimp are cut into small pieces to distribute throughout the rice, while some are kept whole for garnish.
3. Add a little more oil if needed. Add the egg to the pan and break it up. Just before it sets completely, add the cooked rice.
4. Once the rice is mixed with the egg, add the diced onions and the dry seasoning mixture (curry powder, white pepper, sugar, salt). Mix everything thoroughly, breaking apart any clumps of rice.
5. Add the cashews and pineapple to the pan. Cook briefly until the pineapple starts to darken slightly and become translucent on the outside, indicating it's heated through. Re-add the cooked shrimp.
6. Turn off the heat. Add the chopped tomatoes and green onions. These are added at the end for color and to prevent them from overcooking and releasing too much liquid.
