Fried Fish Sandwich

50g mayonnaise, 10g capers, 1ea shallot, 30g bread and butter pickles, 1tbsp pickle juice, 5g dill, 1tsp soy sauce, 200g flounder fillets, 5g salt, 50g flour, 2ea eggs, 100g panko, 200ml vegetable oil, 2ea American cheese slices, 2ea buns
Instructions
1. To make the tartar sauce, combine mayonnaise, capers, chopped shallot, bread and butter pickles, pickle juice, dill, and soy sauce. Mix well.
2. Prepare the flounder fillets by cutting them crosswise into squarish pieces. It's okay if they fall apart, as more edges lead to crispier fish.
3. Season the flounder pieces generously with salt on both sides.
4. Set up a dredging station: one plate with flour, one bowl with two lightly beaten eggs, and one plate with panko breadcrumbs.
5. Dip each fish piece in flour, shaking off the excess. Then dip in egg wash, and finally coat thoroughly with panko, pressing the panko firmly onto the fillet.
6. Heat about a cup of vegetable oil in a straight-sided pan over medium-high heat until it shimmers and the hot and cooler parts of the oil have melded together.
7. Carefully place the breaded fish into the hot oil, moving it away from you to prevent splashing. Fry for about 1.5 minutes per side.
8. Once golden and crispy on both sides, remove the fish from the pan and season immediately with a little more salt.
9. Assemble the sandwiches: place a slice of American cheese on the warm fried fish to melt. Spread tartar sauce generously on both sides of the bun.
10. Place the cheesy fried fish on the bottom bun, then top with the other bun half.
